The vinification of this Jouveaux O19 is an eloquent illustration of purity and low-intervention approach. Fermentation is completely natural, and the wine is aged in old barrels, with no fining, filtration or added sulphites. This method aims to showcase the inherent purity and power of the Chardonnay grape, producing a wine of great authenticity and distinctive character. The wine develops its complexity and depth during the two years of ageing in large 1,200-litre foudres before bottling.
This Jouveaux O reveals a rich and varied palette of aromas on tasting. Notes of citrus, white fruits and white flowers mingle harmoniously with hints of dried saffron, incense, nashi pear, yuzu zest and salted cashew butter. The palate is refreshingly lively, with occasional hints of warmer, sweeter fruit depending on the vintage. The wine’s slight natural oxidation adds further complexity, enhancing the salty, nutty and spicy flavours.
