Founded in 1744, Domaine Collet is nestled in Fontaine Denis, in the heart of the Côte de Sézanne, an iconic wine-growing region in Champagne. The vineyard has grown and developed over the generations. Today, it comprises five hectares of vines expertly cultivated by Florent, Vincent and Thomas, three brothers who passionately practise a gentle viticulture. Succeeding their father René, they cultivate Chardonnay and Pinot Noir with the greatest respect for the land and biodiversity. Each parcel receives specific care depending on its needs, and yields are also monitored to ensure the character of the terroir comes to the fore. In the winery, the philosophy is the same. In the winery, vinification involves very little intervention to allow the fruit to fully express all its aromas naturally. Long ageing periods allow the vintages to develop all their subtle aromas naturally, thereby establishing the signature of the domain’s wines.
The Esprit Couture cuvée reflects the estate’s commitment to producing elegant, authentic Champagnes of great finesse. This tribute to tradition and longstanding expertise is the fruit of a meticulous blend of 40% Chardonnay, 50% Pinot Noir and 10% Pinot Meunier. In the winery, rigorous processes are followed to produce the estate’s signature cuvées. Long ageing and precise dosage techniques coupled with a unique blend of Pinot Meunier, Pinot Noir and Chardonnay produce a cuvée with a distinctive character.
The dazzling golden colour unveils a fresh, delicate nose, with floral scents of peony mingling with hints of toast and delicious notes of apple pie. The rich, lightly acidulous palate reveals a superb balance of minerality and salinity, leading to a finish marked by aromas of liquorice and white pepper.
