In 1980, Jocelyne and Michel Paquet established their wine estate in Davayé, in the Mâconnais. Since 2016, it has been run by their three children. This 12-hectare family property is now driven by the new generation determined to uphold the family legacy while embracing a less interventionist approach and applying the principles of organic farming. To revitalise life in the soils, the winemakers use organic and biodynamic compost in the vineyard. Each parcel is also tended individually according to its needs. In the winery, intervention is kept to a minimum at every stage of the winemaking process. This way, each wine expresses its grape variety, its vintage and its unique terroir. The estate’s goal is to produce fine Burgundian wines rooted in respect for the soils and biodiversity. Each step of the process is guided by a pursuit of excellence, resulting in wines that combine quality, authenticity and character.
