The Chardonnay vines take advantage of the unrivalled terroir of Côte de Caillot where the south-facing soils are rich in limestone and pebbles. The parcels, nestled on a steep slope at an altitude of around 500 metres, are carefully looked after, respecting the healthy principles of organic and biodynamic growing. In the vineyard, the balance of biodiversity is respected and the harvests are carried out entirely by hand. In the cellar, after partial destemming, the grapes go through cold static clarification for 12 to 24 hours. Alcoholic fermentation is carried out in 600 litre barrels using indigenous yeasts. Finally, the cuvée is aged on lees for around 12 months.
Its pure and elegant colour enhances the expressive bouquet marked by aromas of white flowers with subtle hints of brioche. On the palate, an explosion of freshness delicately reveals fruity flavours of peach and orange peel. This cuvée can be cellared for several years.
