Enologist and nephew of Marcel Lapierre, Philippe Pacalet has been producing top-quality wines since 2001. The key to the success of his négociant business is his desire to best express the terroir, his meticulous vinifications, non-interventionist methods and his discerning use of minimal doses of sulphur. His extremely natural wines have stunning balance and for the most part, excellent aging potential.
The king grape variety in Burgundy, Chardonnay is responsible for some of the finest dry white wines in the world. These vines grow on clay-limestone soils with a southern orientation, ideal for viticulture. Each vine, with an average age of 25 years, receives the unique care of healthy, sustainable viticulture. In the cellar, the philosophy is the same. Once the grapes have been harvested by hand, they are pressed and lightly settled. Fermentation takes place spontaneously, thanks to the indigenous yeasts naturally present on the grapes. Finally, the cuvée is matured on lees for around 13 months before bottling.
The distinctive feature of this 100% Chardonnay is its great minerality. The bouquet is marked by toasty notes, leading to a smooth palate revealing subtle aromas of white flowers and fruits.
