About the producer

Although Alice (from the Jura) and Olivier (from Burgundy) De Moor export most of their production, they have over the years forged an excellent reputation for themselves. Their wines have been certified organic (Ecocert) for 10 years. With low yields, manual harvests and very little sulfur used, these two winemakers visibly work with meticulous care both in their viticulture and vinifications. The 2009 vintage marked their first year running a small négociant business on the side, in the Chablis and Chablis Premier Cru appellations.

About the wine

Alice and Olivier de Moor, originally from Jura and Burgundy, run this rather specialised domain in the Chablis region. Their wines are highly sought-after due to their level of care, both in the vineyard and the cellar. The Chardonnay grapes used in this Chablis Premier Cru have been carefully grown according to organic principles that were ratified in 2005 and certified three years later, in 2008. Under their command, this noble grape variety, which thrives on the temperate-oceanic climate with continental influences, is encouraged to draw all the necessary nutrients needed for their development from the limestone and Kimmeridgian limestone soils. The same level of respect for the grapes and the terroir is also shown in the cellar as the grapes are hand-harvested and a low-intervention vinification method is used to keep the level of sulphur to a minimum.
This wine, with its wonderful pale yellow colour and green glints, unveils a delicate bouquet of flowers, minerals and citrus fruits. A fine, natural acidity enlivens the wine, making it the perfect accompaniment for a freshwater fish, seafood or shellfish dish.
