Information
In the aftermath of World War I, Roger Pouillon began to write the first chapter of a family saga and of an outstanding complex and vibrant Champagne. His son James then played a key role in developing it, before handing the baton to the third generation represented by Fabrice. The family trademark is innovation combined with a belief in cherishing traditional methods. The vineyard spans 6.5 hectares divided into 36 outstanding parcels in some of the finest terroirs in the region in Aÿ Grand Cru, Mareuil sur Aÿ, Mutigny, and Epernay. The grape varieties planted also contribute to the quality of Champagnes produced. The additional challenge facing the Champagne house is allowing the grapes to express the minerality of their terroir using integrated vineyard management techniques based on the biological cycle and horse-drawn ploughing.
Fabrice Pouillon, at the head of his family estate, certainly isn’t lacking in creativity. Here he has produced a wine he refers to as his ”Re-Belle”; Pouillon had the idea to create terroir-leading wine by infusing his Pinot Noir rather than blending wines of different colours. This is what we call a maceration rosé.
The Pinot Noir grapes which make up this cuvée are grown with care in clay and chalk soils within the Mareuil commune, which is classed as Premier Cru. The grapes were macerated for 12 hours in oak vats and barrels, then the wine was matured in French oak barrels and bottled between six and nine months after the harvest. The bottles were then left to age in the cellar for 18 months to two years.
Delightful and juicy, this rosé champagne has fruity aromas and a wonderful minerality. It would make an interesting pairing with grilled meats.
