Taro Vinícola covers five hectares in the heart of the Canary Islands. It was founded in 2018 by Pablo Matallana, a young and passionate winemaker determined to showcase the islands’ native grape varieties and unique terroir. The name “Taro” comes from the small stone shelters found in the vineyards, where wine growers shield themselves from the sun. Grapevines face particularly harsh conditions here, with only 18 days of rain a year. They must push their roots deep into the volcanic soil to reach water hidden more than a metre beneath the rock. The vines are cultivated organically and often planted in small hollows to shield them from the intense heat. After harvesting the grapes entirely by hand, low-intervention vinification methods are used to craft the wine with minimum inputs and sulfites.
This cuvée reflects technological developments and the new philosophy of the estate, which is more forward-looking and more respectful of nature, while maintaining its ancestral expertise. The Malvasia vines, which thrive in warm climates, are planted in more modern fashion than the traditional trenches, protecting the vines from excessive sun. Malvasia is known for producing highly aromatic, concentrated white wines. Organic and biodynamic viticulture methods allow the vines to draw all the resources they need from the soil. In the cellar, each step also allows the fruit to extract all its aromas freely. The berries are left to macerate for long periods, during which they are pumped over several times.
This white wine is characterised by citrus notes combined with yellow fruit aromas. Elegant and refined on the palate, it is a burst of deliciousness leading to a tasty and exquisitely long finish.
