Located in Vernou sur Brenne, in the heart of the Vouvray appellation, domain Vincent Carême was founded in 1999. The 14-hectare vineyard was planted entirely with Chenin by Vincent Carême and his wife, who have practiced organic farming since 2007. In the winery, vinifications are carried out in barrels and casks, using solely ambient yeasts; the wines are then matured for 12 to 18 months in vats? The vineyard now spans just over 17 hectares. An understated winemaker, Vincent Carême is a major figure in the Vouvray appellation. Consisting of 100% Chenin, this wine draws its strength from the clay-limestone terroir of parcels situated in Vernou-sur-Brenne and Nozay, with vines aged an average of 50 years.
With the estate being certified organic for over 15 years, harvesting is meticulous and follows organic farming principles. And more recently, the introduction of biodynamic treatments has pushed the boundaries further, resulting in ever-brighter grapes. Vinification is undertaken in oak barrels (50%) and stainless steel vats (50%), then the wine is aged for 18 months in old 400-litre barrels.
The outcome is unequivocal: a perfectly balanced wine, dry but immediately gourmet. You will find notes of citrus and white fruit, combined with a beautiful minerality on the palate that adds structure to this Vouvray. Pair it with a fish dish, or age it for a few years to appreciate its undeniable harmony later.
