Maison Skyaasen is expertly run by Joachim and Olivia. Their passion for wine and the Burgundy terroir led them to move to Burgundy in 2017 to establish an exceptional wine trading business that would reflect the region’s terroir and grape varieties. Together, they vinify the region’s finest grape varieties with passion. Well aware of the current environmental concerns and with a view to protecting biodiversity, they produce their wines with the utmost respect for the fruit. Vinification is thus low-interventionist. Fermentation is achieved thanks to naturally occurring yeasts present in the grapes, and sulphur is only added in minimal quantities. The region’s finest appellations are given the opportunity to express all their delicate aromas naturally in each of the vintages produced. Their aim is to offer authentic wines that exude the region’s terroir, sublimated by a unique and ancestral expertise.
The Chardonnay vines, planted along the iconic Meursault hillside, thrive in a soil mostly composed of limestone, which produces wines of great minerality. Each vine enjoys the benefits of healthy, balanced viticulture practices, combined with a natural, low-intervention approach. The hand-picked grapes are pressed directly into 228-litre barrels, where fermentation occurs naturally thanks to the native yeasts present on the berries. The cuvée is left to rest on the lees for a year before being bottled unfiltered, with a minute addition of sulphite.
The pale yellow colour unveils an expressive, festive nose, characterised by scents of peach, honey and white flowers. On the palate, the lively attack is sublimated by a fine freshness, leading gently to a fruity, slightly acidic finish.
