    About the producer

    The Bourgeois-Diaz family has been producing champagne for 4 generations and since 2000, Jérôme Bourgeois-Diaz has been running the 6.5-hectare (ha) family farm in Croutte-sur-Marne. The grape variety is dominated by Pinot Meunier (3.5ha), supplemented by Pinot Noir (2ha) and Chardonnay (1ha). The vines are on average 35 years old and the soil is clay-limestone. In the vineyards, the work is clean and rigorous, organic since 2001 and biodynamic since 2009 (Demeter certification in 2015), a sincere and convinced approach. Similarly, in the cellar, chemical yeast and synthetic sulphur are clearly prohibited and pressing is long and gentle. This dynamic domain ranks among the rising stars of Champagne. Already very popular with connoisseurs of organic and biodynamic wines, we guarantee that it will soon have far wider success as its production is interesting, qualitative and full of character. To be discovered at all costs! This Blanc des Blancs cuvée comes from a single parcel ("The Temple"), well exposed and resting on a soil of limestone marl. This is a Brut nature (0 dosage). It offers all the delicacy and finesse of Chardonnay, in an ample style, offering superb tension and a fine bitter taste.

    About the wine

    The Pinot Noir vines, planted in 1983, thrive and develop wonderfully in the gypseous clay-limestone terroir. The estate strictly adheres to organic and biodynamic viticulture and winemaking methods, both in the vineyard and in the winery, combined with a natural approach. The harvested grapes are pressed in a traditional press before being vinified in stainless steel vats or oak casks. The cuvée has the particularity of being aged in 25 hectolitres ‘foudre’ (large wooden tuns). The wine is aged under cork and carefully tied up after disgorgement.
    The elegant golden-yellow colour reveals a luscious bouquet, marked by notes of pastry. The delicate, fragrant palate reveals a superb balance of powerful Pinot Noir and fine fruity aromas, leading to a flavoursome, persistent finish. This superb cuvée can be enjoyed while young or after several years of cellaring.
