The Saint-Aubin 1er Cru Les Combes au Sud produced by Domaine Jean-Claude Bachelet is an absolute Burgundian treasure. Cultivated on around 0.5 hectares of limestone and marl soils, this terroir imparts a distinctive minerality to the wine. Manual harvests guarantee a meticulous selection of the grapes. The winemaking process starts with a delicate pressing of whole bunches of grapes, followed by fermentation in oak casks, including 15% new wood. This traditional method allows the extraction of the quintessence of the Chardonnay grape while providing remarkable structure and complexity.
The wine is aged for around 12 months, developing subtle aromas of white fruit like apple and pear, combined with notes of white flowers and a hint of hazelnut and butter resulting from the cask ageing process. On the palate, its elegance, perfect balance of acidity and roundness, and long, lingering finish are outstanding.
