Joseph Matrot, the grandson of vineyard owners in Puligny-Montrachet, settled in Meursault at his wife's family domaine in 1914. Six generations later, the sisters Adèle and Elsa Matrot joined their parents Thierry and Pascale on the domaine. Since 2000, the 22 hectare vineyard has been converted to organic farming.
With an average age of 55 years, these vines stretch across the legendary Burgundy landscapes between Meursault and Auxey-Duresses. The domain harvests its grapes entirely by hand to ensure optimum preservation. In the winery, following full destemming and a three to six-day cold vatting period, grapes undergo spontaneous fermentation triggered by indigenous yeasts present on the grapes. The fermentation process, which includes punching down the cap and pumping over the must twice a day, is followed by a lengthy 15-month ageing period in oak casks, 20% of which are new. Lastly, the wine is left to rest in vats for a further three months before being bottled.
The rich ruby colour reveals a nose full of aromas of small black fruits. The fine acidity in the mouth is perfectly balanced by the textured tannins. This wine may be enjoyed in its youth or following a good few years of cellaring.
