Marie-Thérèse Chappaz took over the running of the domain in 1987, which at the time was composed of a hectare and a half of vines in the Valais in Switzerland. She has expanded the domain – now 10 hectares – spread out in a patchwork of small parcels on hillsides, at between 400 and 600 metres above sea level. The vineyard has Demeter biodynamic certification. This renowned winemaker has been recognized for contributing to the reputation of Swiss wines: in 1996, she was named ‘winemaker of the year’ by Gault&Millau, then ‘icon of Swiss wine’ in 2016. She produces exceptional biodynamic wines. The domaine is particularly known for its production of Petite Arvine, a very rare white grape variety native to Switzerland.
Syrah vines thrive on soils made up of clay and granite thanks to the benefits of biodynamic principles. The natural cycle of the soils is maintained and no fertiliser or chemicals are used. The vines, with an average age of 20 years, are harvested exclusively by hand to guarantee a high-quality raw material. Once they arrive in the cellar, the destemmed grapes are macerated for a long period of time before going through spontaneous fermentation using the indigenous yeasts naturally present in the grapes. Finally, the cuvée is aged in majority oak barrels, with a small number of new ones in the mix, for 12 months, before being bottled after a light filtration using minimal levels of sulphur.
The deep and intense purple colour is enhanced by a southern bouquet with notes of spice and vanilla. The fine and concentrated palate reveals perfectly balanced tannins, leading to a rich, long and flavourful finish. The perfect wine for ageing.
