The Burgundian winery Moillard, established in 1850 by Symphorien Moillard, is renowned worldwide for producing exceptional, rich and fragrant wines. Extensive modernisation work was carried out just over ten years ago. The winery was rebuilt, the cellar completely renovated and new production techniques introduced. The company’s objective is to take a more sustainable and environmentally friendly approach, using more modern wine-making processes. It is in this ambitious and impassioned context that the domain has released its first organically produced vintages. The company’s oenologists comb the Burgundy winegrowing landscape to unearth the hidden gems, making it a point of honour to source grapes that come from healthy, well-balanced viticulture. As a result, the region’s finest appellations are brought together at the iconic Maison Moillard.
This cuvée from Domaine Moillard comes from a vineyard located in the heart of the Côte de Nuits, benefitting from a clay-limestone soil. Harvests are carried out by hand, with rigorous selection of grapes to guarantee the best possible quality. After cold maceration to extract the aromas and colour of the Pinot Noir grapes, vinification takes place in stainless steel vats, followed by malolactic fermentation in oak barrels.
This process develops the depth and aromatic complexity of the wine. Ageing lasts for around 19 months in French oak barrels, of which a significant percentage are new barrels, giving the wine woody notes and subtle hints of vanilla. On the palate, this Clos de Vougeot Grand Cru stands out for its aromas of ripe red fruit, strawberry, raspberry, cherry, plum, wood and sweet spices, with an elegant tannic structure and remarkable ageing potential.
