Situated in Banyuls in the Roussillon, at less than a kilometer from the sea, La Rectorie (7 hectares) was passed down to the Parcé bothers. Having returned to the family property in the 1980s, Thierry and Marc extended their Banyuls production to that of very high quality dry white wines. Work in the vineyard wears the peasant traces of their great-grandmother, Thérèse's roots (animal draught cultivation, manual harvests, use of local grape varieties, etc.). Nowadays, it is managed by Marc and Thierry Parcé, for whom the age of the vines, the use of the ‘original' grape varieties and the controlled yields (20 to 25hl/hectare) are the key to successful vinifications. The domain bottles around 80,000 bottles every year. Most of the production is centered the vinification of Collioures rouges, but La Rectorie also produces white wines as well some Banyuls (15% of production). The wines are not fined.
Descendants of the Grenache Noir grape, Grenache Gris and Grenache Blanc are reputed to be vigorous and resistant to hot weather. Domaine de la Rectorie takes great care in cultivating these varieties, which originated in Spain. After the harvest, the Grenache Gris and Grenache Blanc grapes are gently pressed before each variety is vinified separately. The cuvée is aged in barrels under a veil of yeast for two to four years. This unusual technique is born of a wine that has fermented over a long period to become dry or almost dry, and which has subsequently developed a light veil of very resistant yeasts.
The golden straw colour reveals a heady bouquet, with notes of almond and walnut mingling harmoniously with scents of white fruit, leading to a generous, lingering finish. This superb vin de voile can be cellared for up to ten years.
