A native of Quebec, Patrick Piuze has worked in many wine-growing areas throughout the world and in Burgundy. In 2008, he decided to start his own trading house. He buys grapes ranging from simple Chablis to grand cru through to the premier crus.
Chardonnay vines grow upon a very unique soil emblematic of a Chablis Premier Cru. The soil’s particularity comes from the Jurassic bedrock dated from 150 million years ago. Small oyster shell deposits are embedded within the rock, a souvenir from when the Burgundy region was once below sea level. Located near the city of Auxerre, the Chablis vineyard follows the banks of the Serein river. Patrick Piquez aims to showcase the remarkable characteristics of the Chablis terroir through his cuvées, including his Chardonnay which exquisitely embodies the most delicate nuances. He selects the best plots of the Chablis vineyard and harvests only the highest quality grapes.
The straw-coloured wine shimmers with specks of gold and aromas of melon and pear, along with earthy undertones. The delicate yet full-bodied mouthfeel reveals a delicious minerality, ending with a surprisingly long finish. This cuvée has the potential to cellar exceptionally well.
