We’re headed to the Charmes-Chambertin Nuiton Grand Cru to take a closer look at Antoine Lienhardt’s unique winemaking methods. Thanks to meticulous and rigorous certified organic and biodynamic cultivation methods, the Pinot Noir grapes used to produce this cuvée were able to extract the quintessence of this exceptional terroir. The soils here, consisting of clay and limestone, greatly benefit the vines, producing dense, deep wines infused with freshness. In the winery, the winemaker and his sister Heloïse, who joined him in 2017, apply the same ethos of promoting the terroir. The grapes are individually hand-picked and thoroughly sorted. Native yeasts initiate fermentation and no inputs are involved in the process. Extractions are minimal, vatting times short and the wine is gravity-fed into the cask cellar. The wine is aged in wood and partly in concrete eggs.
Designed for ageing, this wine displays notes of red and black fruit, complemented by complex and diverse aromas of musk, sweet spices, game, leather and humus. The tannins are very present and the power of the cru calls for robust gastronomic pairings. Truffles, game, red meat and squash would all constitute perfect choices.
