It is no coincidence that this estate is called Les Parcellaires de Saulx. Here, each single vineyard and terroir is nurtured to reveal its full potential to wine lovers. This red Volnay is produced from the Les Mitans Premier Cru, an old French name that translates to the middle, the centre. This is because the vines are planted on a hillside renowned for its clay, marl and limestone content. Designed for ageing for around ten years, the wine is matured in second-fill casks for anything from one year to 15 months.
In the glass, the wine reveals a relatively light garnet-red colour. The bouquet reveals notes of red fruit such as redcurrant and juicy strawberry, along with floral aromas of dried rose and peony. The finish lingers on empyreumatic and spicy notes that give the whole a lovely complexity.
