Xavier Weisskopf established Domaine Rocher des Violettes in 2005. He was born in the Oise region in 1979 and trained as a winegrower in Chablis. He continued his apprenticeship in Beaune where he became cellar master at Gigondas before creating his own property. His vineyard parcels are dotted around the commune of Saint-Martin-Le-Beau with 9 hectares in Montlouis and 4 hectares in the Touraine AOP. The vines are mature in age and Xavier Weisskopf does not use chemical fertilisers or products. Harvests are carried out by hand and every effort is made to limit oxidation and to preserve the wines’ integrity. If you have not already done so, it is well worth trying these wines which are currently superb.
Chardonnay is the king of Burgundy and blossoms splendidly in the heart of the Loire Valley. The 30-year-old vines climb across soil composed of clay mixed with a small portion of limestone and are pruned according to the Guyot method. Each plot is carefully and meticulously cultivated to respect organic farming methods. They enjoy an ideal exposure and a continental climate mixed with an oceanic influence. Each vine thrives by drawing on the nutrients deep within the soil. The harvest is performed entirely by hand, followed by traditional vinification processes that use as little intervention as possible. The cuvée is matured for seven months in a truncated cone-shaped vat called tronconic vats (cuve tronconique) before being bottled.
The crisp and intense nose flaunts citrus aromas accompanied by slightly toasted notes. The smooth palate exhibits a subtle saltiness, leading to a crisp, delicious finish.
