This Premier Cru is named after a hill sandwiched between two larger hills, with southeastern and northeastern exposure. The fruit from this terroir is harvested late because of the exposure to wind and sun during the first hours of the day. The Chardonnay vines grow on Kimmeridgian marl, under thick layers of clay. The estate uses organic methods both at the winery and in the vineyard to respect the environment. Once harvested, the grapes are sorted, pressed, and placed in stainless steel tanks. The native yeast that naturally exists on the skin is used for the fermentation process, and the wine matures naturally.
The nose expresses subtle hints of white fruit, such as pear and apple. The palate is beautifully balanced between the mineral quality and slightly smoky aromas, for a long, crisp finish.
