Located in the Hautes Côtes de Beaune and the Côte de Beaune, the farm of Agnès Paquet extends over 8 hectares. The vineyard is ploughed by hand and vinification is done using the yeast of the grapes. The wines produced are tender, fruity, rich and complex. The village of Auxey-Duresses has remained in the shadow of its more prestigious neighbours for far too long since the famous Domaine d'Auvenay put the spotlight on this Côte de Beaune village. Agnès Paquet makes sublime wines and they are far more accessible!
Agnès Paquet’s estate sits in the Hautes-Côtes-de-Beaune region and stretches over eight hectares of carefully cultivated vines, cultivated following environmentally friendly methods that include ploughing the soil manually. This white Burgundy is produced from Chardonnay, a noble grape variety typical of the region. Under her care, the vines are encouraged to draw the nutrients they require to thrive from soils consisting of clay and limestone, which create a fine balance of density and liveliness. In the winery, the grapes undergo alcoholic and malolactic fermentation in large capacity casks before the wine is matured for ten months. This is followed by two further months of maturing in vats. No new wood is used in this process, to let the delicacy of the grape variety express itself through notes of white fruit, citrus and minerals.
