Information
The story of Domaine Goisot goes back to the 14th century. It has vines in the Auxerre area in Saint-Bris and Irancy, some of Burgundy's southern most areas. Organica practices have been employed since 1990, with certification awarded in 2001 and a biodynamic certificate was awarded in 2005. Jean-Hugues and and now his son and granddaughter chose biodynamic viticulture as the best way to respect the upper Jurassic marl, limestone terroir very similar to that of Chablis. Their motto is that a good wine cannot be made without good grapes. Vinifications are traditional, with minimal intervention to best express their much cared-for terroir.
Biodynamic viticulture is a way of life at Domaine Goisot. This Chardonnay, cherished by the Burgundy soil, is grown with the utmost respect for the terroir. Innovative viticultural practices combine with age-old traditions to create a wine of exceptional purity. In this cuvée, the Chardonnay grape unfolds all its splendour, offering a superb array of delicate aromas. The bunches of grapes, gently swayed by the Burgundy breezes, impart floral aromas and unrivalled freshness.
A pale golden colour reveals a symphony of aromas. The subtle notes of white flowers and citrus fruit seduce the nose. On the palate, elegance and finesse are expressed through ripe fruit flavours, supported by a refined minerality, offering a sensory experience of rare intensity.
A carpaccio of scallops will tantalise the taste buds. Follow this with chicken with morel mushrooms, an exquisite encounter of textures and flavours. Vegetarians will love a pairing with an asparagus risotto, while a lemon meringue pie will bring a sweet finale to this unique taste experience.
