    About the producer

    Originally from Lille, Maxime Dancoine trained to be a winemaker in Beaune and Changins, Switzerland. He took over some vines located in Aiton in 2016 and set up Domaine de l’Aitonnement. Covering 1.5 hectares, the vines grow on steep slopes with a 70% gradient. There, they enjoy the continuous sunshine and a breeze that reduces the risk of diseases – a very good thing as they are cared for using biodynamic methods. Maxime Dancoine produces beautiful wines from Mondeuse Noire, Jacquère Blanche and Altesse. He also has some plots with relatively unknown Savoie varieties such as Joubertin Noir, Blanc de Maurienne and Mondeuse Grise and Blanche. Produced without sulphur, the wines are remarkable.

    Crafted by the Des Vins d’EnVie estate under the supervision of Maxime Dancoine, this cuvée is an invitation to explore the rich, enchanting flavours of Savoie.
    The Cap au Sud vines thrive in the exceptional climate of the eponymous site. Lovingly crafted by Maxime Dancoine, this wine draws its unique character from local grape varieties including Mondeuse and Gamay, offering an authentic and unforgettable sensory experience.
    Cultivated following biodynamic principles, each bunch of grapes is nurtured with the utmost care to reach peak ripeness. The grapes are hand-picked to select the most delicate grapes, to guarantee the highest quality.
    This wine encapsulates the quintessence of Savoyard grape varieties, reflecting the rich complexity of the region’s soils and climate, with fruity, spicy aromas of great finesse. In the glass, this Cap au Sud displays a deep, intense colour. On the nose, notes of ripe red fruit combine with hints of spice to produce an alluring bouquet. On the palate, the delicate structure and silky tannins offer a harmonious drinking experience, revealing a skilful balance freshness and complexity.
    This elegant red is the perfect partner for regional Savoy dishes full of cheese such as tartiflette or raclette (see our wine pairing blog post on these if you don’t know what they are). It will also subtly complement grilled meats or mature cheeses.
