The Chardonnay vines stretch across the charming Burgundy commune of Villars-Fontaine, on clay-limestone soils in the heart of the Hautes-Côtes-de-Nuits appellation. Here, the grapes are cultivated following organic viticulture principles, excluding all fertilisers and chemical products. In the winery, the hand-picked fruit undergoes a traditional, low-intervention vinification process. Fermentations are triggered by native yeasts naturally present in the berries. To create an authentic cuvée with character, the wine is bottled without fining or filtration.
The bright golden colour reveals a delicate nose combining aromas of white flowers and citrus fruit. The complex, flavourful palate strikes a remarkable balance between the generosity of the Chardonnay and the freshness produced by the region’s clay-limestone soils. The flavoursome, lingering finish promises several fine years of cellaring.
