    About the producer

    Vassaltis. A name that makes you think of the Mediterranean and takes us straight to the breezy island of Santorini in Greece. Because that is where you will find this vineyard. To be more precise, it’s located in Vorvoulos on the north-west side of the island. Created in 1980 by the father of the current owner, Yannis Valabous cares for the vines the grow on basaltic rocks today. The soil which is formed as lava cools allows the grapes to create precise wines with a striking minerality, and this same lava inspired the estate's name - vassaltis means basalt in Greek. Aged between 50 and 80 years, the vines which are the traditional varieties of Assyrtiko (the island’s top variety), Aidani, Mavrotragano and Athiri grow on around 10 hectares and are tended to by hand following traditional methods. To protect the grapes from the violent winds that batter Santorini and the blazing sun, the vines are trained to grow in nest shapes according to the “kouloura“ method. The harvests are done by hand which allow the yields to be controlled - they amount to about ten hectolitres per hectare. In the cellar, the wine are mature on their lees in vats.
    The estate's wines are known for their purity and minerality. Their beautiful white wines take us on a journey to the Cyclades islands with every sip.

    About the wine

    Assyrtiko, an ancient white grape variety, mainly grown in Greece on the island of Santorini is reputed for producing white wines of fine acidity. The cuvée is produced through a meticulous vinification process following precise age-old techniques. The Assyrtiko grapes are picked when slightly over-ripe and vinified in stainless steel tanks. The wine is then aged for 12 months in old, uncapped local barrels, to ensure gentle, precise oxidation. Lastly, the wine is bottled and cellared for two years before it can be enjoyed.
    The golden colour reveals a majestic nose, characterised by aromas of toast and vanilla, combined with complex scents of tangerine, blood orange and white pepper. The structured and concentrated mouth delicately affirms the aromas of the nose and gently leads to a delicious persistent and refreshing finish.
