Domaine Moreau-Naudet's cuvée Vaillons originates from the left bank of the river Serein. The vineyard is located in the Sécher hamlet, on a plot of old vines that are around fifty years old, which contributes a distinctive mineral and floral character to the wine. The Vaillons single vineyard, with its south-east exposure, enjoys mostly morning light and the shallow Kimmeridgian soil gives the nectar a mineral, lively and structured richness. Prolonged ageing refines the wine, enriching it with concentration and minerality.
On tasting, this elixir displays a very fresh nose, combining aromas of flint, green apple, lemon, lime blossom, mint and acacia. On the palate, notes of citrus fruit, peach and apple emerge, along with a fine minerality. The attack is lively, and the finish is both fruity and mineral, with great length. This wine can be appreciated in its youth, and improves with age as the aromas develop more honeyed and exotic notes, while retaining the distinctive minerality.
