Cuvée Vaillons from Domaine Moreau-Naudet originates from the left bank of the Serein. The grapes grow on the Sécher locality, a parcel of old vines around fifty years old, conferring a distinctive mineral and floral character on the wine. The clay-limestone terroir provides exceptional depth and finesse to the wine. The estate applies a strict approach to cultivating the soil, with no chemical treatments, respecting the environment and the character of the terroir. The wine is matured for 24 months in a combination of vats, casks and demi-muids, enhancing balance, delicacy and complexity. The pale yellow colour with green reflections is clear and bright.
The floral nose reveals delicate aromas of white flowers and ripe white-fleshed fruit, complemented by hints of almond, beeswax and luscious wood. This Chablis Premier Cru is extremely rich on the palate, with a round persistence and a saline tension on the mid-palate.
