Domaine Bernard Moreau et Fils produces a Saint-Aubin 1er Cru En Remilly from 100% Chardonnay grapes cultivated on clay-limestone soils typical of the Côte de Beaune. The grapes are gently pressed to extract a pure and concentrated juice following manual harvests. Fermentation occurs in oak casks where the wine gains its aromatic complexity. The wine is matured on fine lees for 12 to 18 months, which enriches the juice and adds subtle notes of hazelnut and fresh butter.
This nectar is characterised by its pale yellow colour and golden reflections. The nose reveals elegant aromas of white-fleshed fruit, apple and pear, floral notes of acacia combined with a mineral touch. The palate is structured and balanced, with a beautiful liveliness and a long mineral finish. This elixir pairs perfectly with seafood, fish in sauce dishes, white meats and matured cheeses.
