Information
This fruity white wine comes from the heart of the Teide area and is a star in the Canary Islands. It is carefully produced from the Palomino variety which thrives in volcanic soil at an impressive altitude of 1000 metres. The grapes are hand-harvested and left to ferment naturally in open cement vats with native yeast. Afterwards, the cuvée is matured on lees for eight months – partially in cement tanks and partially in neutral French oak casks – before being bottled with only the minimal amount of sulphur.
This inviting wine has a sparkling quality to it, with notes of green apple, crisp pear and a subtle hint of spring flowers. From the first sip, its vibrant nature envelops the palate with flavours of citrus and a splash of almond. The finish unveils a persistent and refreshing mineral quality.
This full-bodied wine is perfect with salads and vegetable stews.
