Domaine Valentin Zusslin is a longtime darling of critics and wine guides (including Bettane & Desseauve and the RVF). The 16 hectare estate which is based in Orschwihr, just south of Colmar, converted to biodynamic viticulture in 1997. Wines are produced from a total of 9 different grape varieties, featuring crystalline whites and structured Pinot Noirs perfect for cellaring.
This brandy was made from hand-picked raspberries in orchards cultivated using biodynamic methods and without any synthetic chemicals or additives. After the harvest the raspberries macerate for five days in pure, organic alcohol produced from distilling the wine lees. The distillation process takes place in a Holstein still, known for its incredibly precise equipment which uses an integrated system of columns and plates. The distillate obtained is then conserved for one year in a tank before its alcohol content is adjusted for sales. This method ensures that the aromas will be balanced and precise.
This brandy’s nose unveils sweet, rich aromas of raspberry, along with the complexity quintessential to berry liquors. The luscious, full-bodied palate marries well with aromas reminiscent of flowers, particularly violet and rose.
