Les Saviaux is a Syrah cuvée produced in the La-Roche-de-Glun terroir. The vines, from 23 to 33 years old, are lovingly cultivated on a soil of rolled pebbles, promoting optimum maturity in the grapes and remarkable aromatic complexity. Most of the grapes are destemmed during vinification, with fewer than 10% whole bunches used in the blend. The wines are vinified with great precision, involving cap punching and a few pump overs, to reveal the full richness of the Syrah’s varietal aromas. Following alcoholic fermentation, the wine is aged for a year in oak casks at 25 °C, followed by racking after malolactic fermentation. Bottling is conducted at Jean-Louis Chave.
On tasting, this cuvée displays a typical Syrah nose, revealing bewitching notes of red fruit, violet and spices. On the palate, this nectar offers a supple, fruity texture, while a more tannic finish prolongs the flavours, providing a balanced, lingering tasting experience.
