The Pinot Noir produced by the Evening Land domain is a magnificent expression of the Oregon terroir. Located in the renowned Willamette Valley wine region, the Seven Springs vineyard rests on iron-rich volcanic soils, providing ideal conditions for this grape variety. The winemaking process follows traditional methods, including whole bunch fermentation which adds complexity and depth to the wine. The wine is aged in French oak casks, with a percentage of new oak, for around 12 to 16 months, adding subtle hints of vanilla and wood.
This nectar displays a deep ruby-red colour. On the nose, it reveals spellbinding aromas of cherry and raspberry, with floral, spicy and undergrowth notes. On the palate, it is elegant and balanced, with delicate tannins and vibrant acidity, leading to a long finish of red fruit flavours and earthy nuances.
