Jean-François Coche-Dury is one of the world's leading figures for the vinification of white wines. In 1972 he took over the domain from his father who built it up in the early 1920's. Over the years he acquired new wine parcels. His domain, which today covers just over 10 hectares, counts 8.5 hectares of Chardonnay and Aligoté. He uses a vinification that reinforces the natural expression of the terroir without changing it: gentle pressing, regular stirring of lees in oak barrels, 50% of which are replaced every year. His style is inimitable; he creates pure and elegant wine whose finesse and persistency are quite remarkable. His wines are renowned and sought after by connoisseurs throughout the world. Les Casse-Tête is a white Meursault produced by Domaine Coche-Dury. This wine is exclusively produced from Chardonnay grapes grown on the limestone-rich soils of the Les Casse-Tête climat. This exceptional terroir imparts a distinctive minerality and remarkable aromatic complexity to the wine. The name Les Casse-Tête alludes to the hard, chalky soil, which poses a challenge for the winemakers who plant their vines there. The grapes are fermented in stainless steel vats to preserve the purity of the aromas. The wine is matured in French oak casks, with a proportion of new wood, which imparts subtle woody notes and a good tannic structure. This simple winemaking method enables the wine to reveal all the richness and complexity of the terroir. This nectar is characterised by intense aromas of yellow fruit, honey, hazelnut butter and floral hints like camomile and hawthorn. The palate reveals a silky texture, a fine acidity, an elegant structure and a long persistent finish.
