Originally from the Jura, François Rousset-Martin took up the family domain in 2007. Trained in oenology and biology, he began by working closely with the local cooperative, to which he entrusted part of his production. Today, he vinifies his 10 hectares himself, much to our great happiness. A Savagnin specialist, François manages to express all his passion through the wine he produces, and this with a non-interventionist approach. His cuvées are single-parcel and coveted in all four corners of the world. Japanese wine enthusiasts are particular fans of Jura wine because of the ‘umami' flavour it is said to have. So you might have to fight to get your hands on one of these precious bottles.
François Rousset-Martin presents us with a Côtes du Jura Professeur Sous-Roche. This single-varietal Savagnin comes from the iconic "Sous Roche" parcel located just below the village of Château Chalon. The vines thrive in Nevy-sur-Seille, on a soil composed of clay-limestone pebbles, along with gray marls from the Late Jurassic period. These lands are ideal for producing Savagnin, the flagship grape variety of the region. Although he does not hold certification or labels, François Rousset-Martin cultivates his vines in a manner that respects the surrounding environment. No chemical fertilisers or inputs are used in the vineyard. They do not use any chemical fertilisers or weedkillers.
In the winery, the pressing process is quite lengthy. This is followed by alcoholic fermentation directly in barrels, using natural yeasts. François Rousset-Martin doesn’t add sulphites to his wine. To finish, this Savagnin is aged for 33 months.
A wine of great complexity is revealed on tasting. The nose reveals a blend of tropical fruit and herbaceous aromas. On the palate, the wine exhibits a beautiful tension and remarkable freshness. The finish is exquisitely elegant.
