Domaine de Cassiopée, located in the heart of the charming Burgundy commune of Sampigny-lès-Maranges, is run by Hugo and Talloulah Mathurin, a young couple of enthusiastic winemakers. Established in 2020, the vineyard boasts 5 hectares of vines stretching across some of the region’s finest appellations. Their ambition is to produce wines that perfectly reflect the identity and characteristics of each of their plots. To achieve this, they cultivate each parcel in a specific way, providing them with all the care they need. Each step in the vineyards is carried out with the utmost respect for the soil and biodiversity. In the winery, vinification involves minimal intervention and sulphur is used in minute quantities. It is in this peaceful, harmonious setting that the young winemakers produce fragrant, authentic wines that perfectly reflect the grape varieties and terroir in the purest Burgundian tradition.

The locality of Mitancherie, situated on the classic limestone and clay-limestone soils typical of Burgundy, imparts a refreshing minerality and a beautiful tension on the palate to this cuvée. The combination of these soils with a temperate climate creates a perfect balance, allowing the Aligoté to showcase its lively character. The history of this vineyard reflects a century-old winemaking heritage, where sustainable practices have always been upheld to preserve the authenticity of the terroir. The winemaking process is carried out in stainless steel vats to maintain the purity and freshness of the Aligoté grapes' aromas. No oak ageing is used, allowing the true expression of the terroir to shine through.
The wine presents a pale yellow colour with subtle green hues, a sign of its youth. The nose is expressive, revealing notes of lemon, green apple, and white flowers. On the palate, the attack is vibrant, followed by a lovely minerality and a light salinity on the finish, an unmistakable signature of the limestone terroir.
