Champagne Pierre Baillette, now expertly run by Périne Chartogne Baillette, presents Le Mont Ferré, an Extra Brut Premier Cru Blanc de Blancs. The wine is made exclusively from Chardonnay grown in the village of Trois-Puits, the estate’s home village. South of Reims, the vines flourish on gentle slopes and in small valleys with north- and south-facing aspects. The soils are dominated by chalk, interwoven with seams of clay and limestone. At the estate, biodiversity is a top priority, with herbicides and insecticides entirely excluded from the parcels.
In the winery, fermentation takes place with native yeasts naturally present on the berries. The wine remains in vats for several months before spending almost a year in 350-litre oak casks. It is then aged for 24 months on lees, before being bottled unfiltered.
