The slopes surrounding the small village of Sermiers are home to the vines nurtured by a talented young winegrower. At the helm of the eponymous estate, Emilien Feneuil presents Les Goulats, a sparkling rosé made from Pinot Noir using the saignée method. The vines grow on the superb Premier Cru terroirs of Sermiers, where the soils combine chalk, clay and limestone. They benefit from gentle slopes and numerous small valleys, providing a wide range of different aspects. Emilien practises sustainable viticulture with respect for the living ecosystem, banning herbicides, insecticides and all chemical inputs from the heart of his parcels.
In the winery, the philosophy is much the same, with a low-intervention approach to winemaking. On arrival at the winery, the whole bunches undergo more than 12 hours of maceration. Spontaneous fermentation with native yeasts then takes place in seasoned oak barrels. The wine is subsequently aged on its lees for almost four years.
