Nestled in the green foothills of southwestern France, Domaine de Apollin has created Les Vergers, a unique wine that is not subject to any AOC regulations and is labelled as a Vin de France. This conscious choice allows Florent Fourny to free himself from technical constraints and focus on expressing the pure essence of the terroir. The wine has its roots on a hilly terroir located between Gascony and the Pyrenean foothills, on clay-limestone soils mixed with red sand and pebbles. The grapes are harvested by hand at optimal maturity. The winemaking process is gentle: whole bunches are slowly pressed, followed by spontaneous fermentation with indigenous yeasts in stainless steel vats. The wine is then aged on fine lees for eight months without fining or filtration, preserving its full aromatic integrity.
The wine is a pale and bright yellow colour with silver hues. The nose is complex, blending aromas of white flowers, citrus fruits and juicy pears with a touch of herb reminiscent of verbena. On the palate, the wine is taut, pure, and sapid, with a lovely limestone minerality on the finish.
