Domaine Chevillon, in Nuits-Saint-Georges, was created in the 1900s by Symphorien Chevillon. Since 2003, the brothers Denis and Bertrand have been running this 13-hectare farm. Although the domaine is discrete, its wines are no less famous and sought-after (especially for export). They are characterised by very beautiful fruit, subtle élevage and great finesse.
The terroir of Nuits-Saint-Georges is characterised by rich, diverse soils, predominantly limestone-clay, with a southern exposure. The grapes are harvested by hand at optimum ripeness to preserve the purity and quality of their aromas. Yields are carefully controlled to produce healthy, concentrated fruit. Following gentle pressing, the must undergoes temperature-controlled fermentation in stainless steel vats to preserve its freshness and primary fruit character. The wine is then aged for 12 months in a combination of oak casks and stainless steel vats. The wine displays a pale, brilliant yellow hue with golden highlights, reflecting its maturity and richness. The complex, elegant nose reveals aromas of white flowers, preserved lemon and green apple, complemented by a delicate mineral note. Broad and creamy on the palate, it combines fine structure with vibrant acidity, bringing freshness and precision.
