    About the producer

    The Burgundian Domaine Michel Mallard is nestled in the heart of the charming commune of Ladoix-Serrigny, between the emblematic Côtes de Beaune and Côtes de Nuits. Five generations of winemakers have succeeded one another at the head of the domain. Today, it is masterfully run by Maryse and Patrick Mallard, who cultivate their land with passion, combining tradition and modernity. The 11 hectares of Pinot Noir and Chardonnay vines are planted in some of the region’s finest appellations. The winemakers continually question their practices to improve their approach to viticulture. Well aware of the current environmental concerns and with a view to protecting biodiversity, they handle their vines with the utmost respect for the soil. In the winery, vinification involves very little intervention, and sulphur is added in minute quantities to allow the fruit to fully express all its aromas and flavours. The result is a selection of fresh, authentic, fragrant wines perfectly reflecting Burgundy’s delicious grape varieties. 

    About the wine

    The vines grow on Jurassic clay-limestone soils, alternating yellow, ochre and brown marls with layers of limestone. South-west-facing slopes at 280 m altitude ensure optimal drainage, a slow, late ripening and elegant concentration for the Chardonnay. In the winery, the carefully sorted grapes are pressed in whole bunches, then left to settle for 12 hours. Fermentation takes place with native yeasts in oak casks, with about 50% new wood. followed by a 12-month maturation period.
    In the glass, the wine shows a bright, clear pale gold. The nose is intense and complex, opening with candied orange, toasted brioche, fresh hazelnut, acacia and beeswax, all carried by the saline mineral tension typical of great limestone terroirs. The palate is rich and structured, with a noble breadth balanced by fresh acidity, leading to a long, mineral-driven finish.
