Bien qu'on y produise du vin depuis le milieu du XIVème siècle, Château Smith Haut Lafitte voit véritablement le jour au XVIIIème siècle avec Georges Smith, son fondateur. Quant au nom « Lafitte », il vient du latin « ficta » (« la pierre »), devenu « fitte » en patois gascon pour désigner une croupe de graves, semblable à celle sur laquelle est implanté le vignoble. Devant la superbe qualité de sa production, Georges Smith dernier décide de l'exporter vers l'Angleterre pour y satisfaire les nombreux amateurs de « New French Claret ». Après plusieurs changements de propriétaires au cours des deux siècles suivants, et un certain déclin qualitatif, l'arrivée de la famille Cathiard à la tête du domaine en 1990 va donner un nouveau souffle à la production. C'est ainsi que Smith Haut Lafitte retrouve, dès le millésime suivant, toute sa splendeur d'autrefois aux yeux des amateurs, étrangers pour la plupart car les propriétaires continuent de privilégier la voie de l'exportation qui fut chère au fondateur.
Le vignoble du domaine s'étend sur 56 hectares, dont 45 sont dédiés à la production de vin rouge. Pour répondre à son souci d'excellence, le château possède aujourd'hui sa propre tonnellerie : il peut ainsi contrôler le processus de fabrication des barriques. Dans la même optique, une station météo intégrée permet de prévenir les conséquences des intempéries sur la vigne. Le château est devenu l'un des pionniers de l'oenotourisme de luxe à Bordeaux. Et la famille Cathiard est également à l'origine de la marque Caudalie.
