Today, Fabien is at the helm of Maison Cazé-Thibaut, and offers us this Extra Brut Champagne "Crayère." This cuvée originates from Châtillon-sur-Marne and is a blend of 55% Pinot Meunier and 45% Chardonnay. In the vineyard, Fabien prohibits the use of herbicides and insecticides. As is typical in the Vallée de la Marne, the soil is primarily limestone, imparting significant minerality and freshness to the resulting wines. As the name suggests, this parcel lies on chalky soil. In the Cazé-Thibaut family, ageing is extensive, with maturation on fine lees lasting from 24 to 72 months. For this Extra Brut Champagne "Crayère," the dosage varies by vintage, ranging from 0 to 6 grams of sugar per litre. With a cellaring potential of up to 10 years, this cuvée develops aromas of tropical fruit and yellow fruits on the nose, along with an oxidative note characteristic of the estate. The palate is fresh with magnificent balance.
