The wine
This prestigious Corton Grand Cru stems from iron-rich clay and marl soils situated at an altitude of 300 metres, which contribute complexity and power to the grapes. Manual harvests are followed by a first selection of bunches in the vineyard and a second on a sorting table in the winery. The grapes are partially destemmed and not crushed, then gravity-fed into vats for a five-day pre-fermentation cold maceration, followed by a long fermentation with native yeasts, with no added sulphur or tannins. The vatting period lasts 22 days, with light pumping over and vertical pressing. The juice is aged on lees for 16 months in French oak casks, with 30% new wood, adding subtle woody notes.
The nose reveals intense aromas of violet, cherry and raspberry, with a floral and peppery touch. On the palate, it offers a dense, delicate texture, marked by freshness and great length.
