Domaine Fumey-Chatelain is one of the most noteworthy and in-vogue estates in the Jura, with 17 hectares of vineyards in Montigny and Arbois. This Chardonnay, named Sauvagny after the locality of the same name, is one of the estate's flagship wines.
The vines for this Sauvagny Chardonnay were planted between 1962 and 2011 in an amphitheatre configuration. Lias and Trias clay and marl make up the soil. These vines enjoy both north and south-facing exposure. The fermentation and ageing process takes place in “foudres” (large wooden tuns), concrete eggs, and 500-litre and 228-litre oak barrels, over a period of one and a half years.
This ageing gives the wine subtle aromas of white fruit and citrus on the nose, while notes of fresh walnut, hazelnut and curry come through on the palate.

About the Producer Fumey-Chatelain

The story of this Jura estate started with Raphaël and Adeline, who initially cultivated just half a hectare of vines and sold their grapes to the cooperative. In the spring of 1991, a devastating frost destroyed most of the Jura vineyards. This major turning point marked the start of a new chapter for the couple. Instead of selling their small crop of grapes, they decided to make their own wines with them, using the equipment of winemaker friends to produce their first vintage. The family business flourished and the couple acquired a charming farm in Montigny-lès-Arsures in 1999. Now with a vineyard boasting over 17 hectares of vines, they have been joined by their son, Marin. He has radically changed the estate’s practices and style of wines, converting the vineyard to organic winegrowing and introducing plot-based and natural winemaking techniques. Today, the wines are already of a high standard and this estate is a gem to watch closely!
