This wine is meticulously crafted, combining Chardonnay and Savagnin, the two main white grape varieties of the estate and the region. Grapes are raisined for around three months, then the wine is aged without topping up for five years, endowing it with intense aromatic complexity.
So what can you expect at tasting? This vin de paille has an expressive nose of quince, hawthorn and fresh grapes, and a soft, smooth palate with a lingering finish of honey and sweet spices.
It can be enjoyed throughout an entire meal, starting as an aperitif to accompany foie gras on toast, right through to dessert and cheese, going especially well with blue cheese.

About the Producer Fumey-Chatelain
The story of this Jura estate started with Raphaël and Adeline, who initially cultivated just half a hectare of vines and sold their grapes to the cooperative. In the spring of 1991, a devastating frost destroyed most of the Jura vineyards. This major turning point marked the start of a new chapter for the couple. Instead of selling their small crop of grapes, they decided to make their own wines with them, using the equipment of winemaker friends to produce their first vintage. The family business flourished and the couple acquired a charming farm in Montigny-lès-Arsures in 1999. Now with a vineyard boasting over 17 hectares of vines, they have been joined by their son, Marin. He has radically changed the estate’s practices and style of wines, converting the vineyard to organic winegrowing and introducing plot-based and natural winemaking techniques. Today, the wines are already of a high standard and this estate is a gem to watch closely!
