More infoThis Chablis is a superb introduction to Fabien Moreau’s savoir-faire, oenologue and current owner of the domain. The Chardonnay grown on this chalk-clay terroir benefitted from an ideal exposure to the south and south-east. To make this cuvée, harvests were carried out by hand, followed by meticulous sorting. The berries underwent pneumatic pressing, cold settling and fermentation thermoregulated at 20°C. The wine was then matured on fine lees for 10 months before further maturing in stainless steel vats. Unsurprisingly, the wine is lively with a mineral profile. It will be wonderful served with delicate dishes
About the Producer Christian Moreau
Today it's Fabien Moreau, an oenologue by trade, who's at the helm of Domaine Christian Moreau -a domain possessing plots ideally situated in grands crus. They are extremely well-kept, and the berries are picked by hand in order to better control the quality of the future juice produced. It is vinified with the view of producing fine, just and precise wines. Thus, Fabien Moreau uses wooden containers frugally, allowing the wines to develop a certain suppleness, even a velvety texture in the mouth.
