Chassagne-Montrachet 1er Cru Les Caillerets Jean-Marc Pillot et Fils (Domaine) 2020

The wine

At the head of this estate since the start of the 1990s, Jean-Marc Pillot has played a large part in its development, in terms of surface area, bottling and exports. Here he presents us with a white Chassagne-Montrachet made from Chardonnay grapes that were planted in 1969 and grown within the Les Caillerets Premier Cru. This noble grape variety is treated with immense care at the estate since each plant is cared for in its own right. The soils are worked meticulously by hand. De-leafing allows a delightful ripeness and green harvesting (crop thinning) guarantees healthy grapes. In the cellar, production is respectful of the raw material. So as to allow the wine to express the identity of its terroir, the vines are not racked and only preventative levels of sulphur are added for antiseptic and stabilising purposes. The wine ages for between six to eight months in stainless steel vats before bottling.
On tasting we are presented with a fine, delicate and pure wine, one that can be cellared for quite some time.

About the Producer Jean-Marc Pillot

Taking over from his father Jean in 1991, Jean-Marc Pillot boosted his domaine: increasing the area, developing bottling and particularly increasing export sales. Jean-Marc Pillot has also distinguished himself by a great mastery of woody aromas (only 30% new barrels). Since 2005, élevage has been refined down to 6 to 8 months in stainless steel tanks, before natural stabilisation and final bottling.
