The wine
Cédric Bouchard has created a champagne with an appealing aromatic bouquet imbued with notes of red fruit. Its delicate and creamy bubbles make for a light and delicious texture. The palate reveals the same aromatic notes and is balanced by just the right level of acidity, which also gives the wine impressive persistence.
About the Producer Cédric Bouchard
Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.
