The wine
The Pays de l’Hérault appellation is situated in the Languedoc and lies in a territory characterised by varied soils and Mediterranean climatic influences. Les Derniers États d’Âme is crafted from vines planted on parcels set at different altitudes, where clay- and limestone-rich soils yield grapes of great aromatic expression. After a manual harvest, careful sorting ensures only the best fruit is retained. Fermentation takes place in temperature-controlled stainless steel vats with native yeasts. A long maceration of three to four weeks allows for a gentle extraction of tannins and aromas. The wine is then aged in oak casks for twelve months.
In the glass, the wine reveals an intense red hue with purplish glints. The bouquet is complex and elegant, revealing aromas of black fruit, notes of garrigue and a touch of sweet spice. On the palate, the wine is rich and structured, carried by firm yet well-integrated tannins.
The spearhead of the Languedoc wine revolution, Mas Jullien was created by Olivier Jullien in 1985. Located in Joncquières, to the north of Montpellier, the domain covers 18 hectares. By studying his soils carefully and using native grape varieties, Olivier Jullien has elevated his domain to the highest levels of excellence, producing refined, subtle, perfectly-balanced wines. The vineyard is cultivated in an environmentally friendly way, and was even organically certified for a while. Olivier Jullien produces superb wines which are acknowledged and sought out by connoisseurs and professionals alike. Thanks to his work, the domain is now clearly at the very peak of the appellation.
